Blueberry French Toast Recipe

12-15 slices of bread (1 lb. loaf)
2 - 8 oz. cream cheese, softened
1 C. blueberries(frozen or fresh)
12 eggs (med.)
2 C. milk
1/2 C. maple syrup

Sauce:
1 C. sugar
2 T. cornstarch
1 C. water
1 C. blueberries
3 T. butter
2-3 T. lemon juice

Directions:
Directions:
Remove crust from bread & cube. Place in 9x13x1/2 inch pan, greased. Cut up cream cheese into cubes, put on bread. Top with rest of bread. Sprinkle blueberries on top. Mix eggs, milk, syrup and pour over bread mixture. Cover and chill 8 hours or overnight. Bake 350º for 30 minutes. Remove foil and bake another 25 minutes. Serve immediately with sauce.
Sauce: Boil first 3 ingredients for 3 minutes. Add blueberries, simmer 3 minutes. Add butter, lemon juice. Serve over bread mixture.

If you use larger eggs reduce the number used or it takes longer to bake. Double sauce for 9x13 pan.
