3/4 cup sugar
1/2 cup shortening
2 eggs
2 or 3 large bananas (ripe)
1/2 teaspoon salt
2 3/4 teaspoons baking powder
2 cups flour

Directions:
Directions:
Cream sugar, shortening, eggs, and bananas. Add, salt, baking powder, flour. Mix thoroughly.
Bake at 350 for 1 hour or till done. If using small pans, decrease baking time.

For variation, you could add:
1/3 cup crushed pineapple (well drained only)
or 1/2 cup chopped nuts
or 1/3 to 1/2 cup coconut.

Can be frozen.
