2 c. sugar
1 c. oil
3 c. flour
1 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
2 tsp. cinnamon
2 c. peeled, grated raw zucchini
1 tbsp. vanilla
1/2 c. nuts, if desired

Directions:
Directions:
Beat the eggs, add sugar and oil. Combine flour, baking soda, salt, baking powder and cinnamon - stir into egg mixture. Add zucchini, vanilla and nuts. Pour into two large, greased loaf pans. Bake at 350º for 1 hour.
