2 T. butter
1 sweet onion, diced
1 ripe pear, peeled and diced
1 T. sugar
1/4 c. each mayonnaise and sour cream
2 oz. crumbled blue cheese
2 filet mignon steaks (I used sirloin steak — I had Scott grill 2 or 3 extra steaks when he was grilling a night or two previously)
Whole wheat tortillas
2 c. loosely packed spinach leaves

1. Melt butter in a frying pan. Saute onion and pear until soft, about 5 minutes. Sprinkle with sugar, turn heat to low and cook until light brown, about 10 minutes. In a small bowl combine mayo, sour cream, and blue cheese.
2. Season steaks with salt and pepper, grill steaks, (if not already done), rare to medium rare. Slice thinly. If steaks are already grilled from the night before, slice the steaks very thinly and then warm a little in microwave or frying pan.
3. Warm tortillas in microwave or frying pan. To assemble wraps, spread about 2 T. blue cheese dressing on each tortilla. Top with spinach leaves, steak, and 2 T. pear-onion relish. Fold bottom inch of tortillas over fillings and fold over sides to form wraps. You can assemble them, put them on a serving platter, and then keep them warm in a 200 degree oven.
