1 small onion, finely grated
1/2 cup vinegar
1 cup sugar
2 teaspoons dry mustard
2 tablespoons poppyseeds
1 1/2 cups Canola oil
4 stalks broccoli, cut into florets
1 large chopped red pepper*
1 small cauliflower**, cut into florets
810 mushrooms, sliced
3 stalks celery, sliced

Blend the first six ingredients until emulsified. Pour over vegetables. Marinate in refrigerator for several hours or overnight. Serve with a slotted spoon.

*Sometimes, I use a small red pepper and a small yellow pepper.
**If available, I use an orange cauliflower. The color is beautiful.
