Ingredients:  
1/2 cup butter
1 cup carrots (cut into 1/2 inch strips)
1 cup chopped onion
1 tsp. garlic
1- 8 oz. can chopped tomatoes (drained)
1/4 cup chopped parsley
1- 14 oz bag herb stuffing mix
1 can chicken broth
1/2 soup can of water

Directions:
Directions:
In large saucepan, melt butter and cook carrots, onion, and garlic until carrots are tender. Add all remaining ingredients. Toss to mix well.
Spoon into buttered 12 x 8 baking dish.
Cover with foil and bake at 375º for 30 minutes.
