1 1/4 lbs. pork cubes for stew, cut into 3/4 inch pieces
1 tbsp. olive oil
2-3 garlic cloves, finely chopped
1/2 tsp black pepper
4 cups fresh zucchini (about 3 medium) cubed
1/2 medium onion, chopped (1 cup)
1 10 oz can of tomatoes and green chilies (rotel brand is best)
1 11 oz can of whole kernel corn, drained
3/4 to 1 tsp salt

Heat oil in a large skillet over medium-high heat 2 minutes, add pork cubes and cook 5 minutes, stirring occasionally, until no longer pink. Meanwhile, wash and trim squash and cube into 1 inch pieces. Chop onion. Stir garlic and pepper into pork cubes. Add squash, stir and cook for 2-3 minutes. Add tomatoes, corn and salt and stir. Cover and cook for 5 minutes or until heated through. Serve
