1 tablespoon cornstarch
1 tablespoon soy sauce
1 tablespoon water
1 pound medium size raw shrimp, shelled
1 large carrot, sliced thinly
1 cup mushrooms, sliced if large
3 green onion stalks, sliced in 3-inch lengths
1 cup snow peas
1 tablespoon vegetable oil
1 teaspoon grated raw ginger, or more to taste
1 clove garlic, or more to taste
1/4 cup water, broth, beer or wine

In a bowl, combine 1st three ingredients well. Add shrimp and allow to marinate while you prepare and slice vegetables. Heat oil in a wok. Saute ginger and garlic over high heat. Add shrimp and stir fry quickly until shrimp begins to turn pink. Add carrots and mix well. Add liquid and cover to allow mixture to steam about 1 minute. Reduce heat, uncovered, and add other vegetables. Stir mixture well, cover again briefly. Remove from heat when peas turn bright green and are slightly limp.
