1lb. ground turkey
1 small onion, chopped
1 clove garlic, minced
1 Tbsp. vinegar
2 tsp.chili powder
11/2 tsp. dried oregano,crushed
1/2 tsp. ground cumin
1 (15oz.) can black beans
draned
dasn of red pepper (optional)
1/4c. water(or juice from beans)
1 (16oz.) jar mild (or med.) salsa
6 (6") corn tortillas cut into 1" strips
1/4 c. shredded reduced-fat cheddar cheese

Cook turkey, onion and garlic in a lg. skillet till the turkey is no longer pink. Drain fat. Add vinger, chili powder,oregano, cumin, and red pepper(if desired). Cook and stir for one minute or more. Stir in beans and liquid and remove from from heat.
Place half 2 Tbsp. of sala on bottom of a 2 quart baking dish. Place half the tortilla strips in the dish. Top with half the turkey mixture and remaning sala repeat layers.
Cover and bake at 325 degrees for 30 minutes. Uncover and sprinkle with cheese. Bake 5-10 minutes more or until cheese is melted.
