1 cup sugar
2 Tbs. soft shortening
1 egg
3/4 cup milk
3 cups flour
3 1/2 tsp. baking powder
1 tsp. salt
1 cup mashed bananas
3/4 cup chopped nuts (optional)

Directions:
Directions:
Heat oven to 350 degrees. Grease a loaf pan. Mix sugar, shortening and egg thoroughly. Stir in milk and mashed banana. Stir in dry ingredients. Add nuts. Pour into pan. Bake 60 to 70 minutes or until a toothpick stuck into center comes out clean. (Crack in top of loaf is characteristic). Cool throughly before slicing.

Banana bread is a good thing to make with overly ripe bananas. This recipe comes from the Betty Crocker Cookbook, circa 1960, that is my favorite source of recipes.
