3\4 cup chopped onion -
1 small carrot, peeled and diced -
2 cloves garlic, diced -
1 to 2 Tbsp olive oil -
1 small can tomato sauce -
2 Roasted red peppers in olive oil, drained and diced
1\2 cup shredded mozzarella cheese
1 1\2 to 2 lbs boneless chicken thighs - you can use chicken breast if you prefer

Béchamel Sauce (white cream sauce) (like making corned beef gravy without the beef)

1 Tbsp butter
1 Tbsp flour
1 Cup whole milk - room temp
1 little sprinkle of nutmeg
salt and pepper to taste
I also added a sprinkle of parsley flakes, basil, poultry seasoning, and celery flakes.

In a large skillet over med heat, saute the first 3 ingredients in olive oil until beginning to soften, then add tomato sauce and roasted peppers. Saute for at least 5 min longer. While that is working you can make your white sauce.
In a non stick pan over med heat, add 1 Tbsp butter. When melted ,add 1 Tbsp flour and whisk to make a thick paste. Slowly add your milk a little at a time whisking constantly to insure you don't have lumps. Once you have added all the milk, continue to whisk as you add your seasonings until your sauce thickens nicely. (The sauce will thicken as it gets hot so be sure to watch the temp.)
Once you have made both sauces, combine the two very carefully and gently stir together.

Put your cleaned chicken in a large cake dish or casserole dish then pour the sauce mixture over the chicken. Bake at 350º uncovered for about 35 to 40 minutes. 10 min before done, top with mozzarella cheese and continue to bake until done.
