2 ripe bananas
1 cup sugar
2 tbsp apricot preserves
1/2 tsp ground Ginger
1 tbsp cinnamon
1 large egg
1/4 tsp rum extract
1 tsp baking powder
1 tsp salt
1/4 cup whole milk
1/4 cup vegetable oil
2 1/2 cups flour

Directions:
Directions:

1. In a large mixing bowl combine bananas, sugar, honey, and apricot preserves. Blend together for about 2 minutes.
2. Add Ginger, cinnamon, egg, rum extract, baking powder, salt, milk, and vegetable oil. Blend together until ingredients are well incorporated evenly.
3. Add flour and mix together for about 2 minutes.
4. Spoon batter into a greased bread pan. Bake in a 350 degree oven for about 45 minutes or until a toothpick comes out clean.
5. Remove from oven and allow bread to cool for about 5 minutes in the bread pan.
6. Remove bread from pan and allow to cool on a wire rack. Enjoy!
