2-1/2 cups cake flour, sifted
2-1/2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1/8 teaspoon ground cloves
1-1/4 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1 stick unsalted butter, softened
1-1/4 cups sugar
2 eggs
1-1/4 cups mashed bananas (3-4 very ripe)
1/4 cup evaporated milk
1 teaspoon vanilla

Directions:
Directions:
Preheat oven to 375º. Prepare 2 9" round cake pans.

Sift together all dry ingredients. Set aside. In large bowl, cream together butter and sugar. Beat vigorously. Beat in eggs, 1 at a time. Mix together bananas, milk and vanilla. alternately add flour and banana mixture, beginning and ending with flour mix. Beat 1 minute. Bake 25 minutes or until cake pulls away from side of pans.
