1/2 c. flour
1 t. paprika
1 t. salt
1/4 t. pepper
6-8 boneless pork loin chops (1 inch thick)
1/4 c. butter
1 med. onion, chopped
1 green bell pepper, chopped
1/2 –3/4 c. sliced mushrooms
2 c. milk
2 T. lemon juice
Hot, mashed potatoes

In a shallow dish, combine first 4 ingredients. Coat pork chops with flour mixture (save remaining flour). In a large skillet, sauté chops in butter until golden brown; transfer to a greased 9x13 baking dish. In same skillet, sauté onion, bell pepper, and mushrooms until tender. Stir in reserved flour mixture; gradually add milk and whisk until blended. Bring to a boil and cook until thickened. Remove from heat and stir in lemon juice. Pour over chops. Cover and bake at 350 degrees for 50-60 minutes or until meat is no longer pink. Serve with hot, mashed potatoes.
