4 T Olive Oil
1 med Onion, Chopped
1/4 C Green Pepper
6 lg Tomatoes, chopped
1/2 C Parsley, finely chopped
3 T Lemon Juice
1 tsp Oregano
1 tsp Basil
2 cloves Garlic, pressed
1/2 to 1 tsp Black Pepper
2 tsp Sugar
3 Beef Bouillon Cubes
2 C Water
1/2 C Rice

Saute until onions and peppers in the oil until they are transparent. Add the remaining ingredients except the rice and simmer partially covered for 20 to 30 minutes. Add the rice and simmer for an additional 30 to 50 minutes or until rice is cooked. Sprinkle with Parmesan cheese, grated cheddar cheese, or mozzarella cheese; a dollop of plain yogurt is good too.
