Ingredients:  
Ingredients:  
1/4 Cup Olive Oil
2 Cloves Garlic (Minced)
2 or 3 Chopped Onions
4 T. Minced Parsley (or dry)
3 T. Basil
(I also add powdered garlic. 1 or 2 Teaspoons)

Saute all of the above ingredients for 10 minutes. Then add:
1 Can of Peeled Tomatoes (chopped)
1 10 oz Can Beef Stock
9 Cups of Water
½ Small Head Savoy Cabbage
5 Carrots (sliced thin)
5 Potatoes (diced) (optional)
Simmer for 1 hour.
Add:
1 Can White Beans
1 Can Dark Red Kidney
1 Can Green Beans
(1 Cup cooked elbows - optional)

Directions:

Salt & Pepper to Taste.
Heat Through - Serve
Total cooking time - approximately 2 hours
Garnish with lots of Grated Parmesan Cheese!
