10 Lbs Hamburger
5 Tbsp Tender Quick Curing Salt
5 Tbsp Mustard Seed (heaping)
3 Tbsp Coarse Ground Black Pepper
2 Tbsp HIckory Smoke Salt
1/2 Cup Minced Jalapeño

Mix all together and mix well. Work with hand for 4 days, counting the mixing day as one. On the fourth day, roll out into 10 1 lb rolls
Bake at 175º for 4 hours, turn every 2 hours. Bake on cookie sheets on top and bottom shelf, switch pans after 2 hours, also drain off the fat at this time.
Cool on newspapers with paper towels on them, dab with paper towels to get as much of the grease off as you can.
Cool completely, then wrap each roll in foil then put them into freezer bags. Freeze and you can take out as many as you want when needed. Slice better with they are half frozen.

This is absolutely wonderful, I haven't made it, but Linda's is great.
