4 - 5 cups cooked squash
1 large onion cut in large pieces
1 10-1/2 oz. can cream of chicken soup
8 oz. sour cream
2 eggs
1/2 cup margarine
1 can sliced water chestnuts
1 small jar chopped pimentos (optional); and
1 8 oz. package pepperidge farm herb seasoned stuffing mix

Directions:
Directions:
Cook Squash and Onion together until done; Drain and set aside to cool.
Combine sour cream, soup and egg; fold in cooked squash and onion and add drained water chestnuts and pimentos;
Melt butter and mix with stuffing mix. Line bottom of casserole dish with 1/2 stuffing mix. Pour squash over top of stuffing mix and top with remaining stuffing.
Bake at 350º 30 to 45 minutes.
