1 tsp olive oil
1 onion, chopped
2 cloves garlic, minced
1 tsp fresh ginger
1 tsp curry
╝ tsp cayenne pepper (optional)
1 Can garbanzo beans, drained and rinsed
1 lb carrots, peeled and chopped
1 sweet potato, peeled and chopped
6 C chicken broth
Salt and Pepper, to taste
1-2 tsp lemon juice (optional)

SautÚ onion, garlic, ginger, curry and cayenne pepper in olive oil. Add the rest of the ingredients. Bring to a boil, then reduce heat and cook for about 30 minutes, stirring occasionally. With an immersion blender or working in small batches, puree mixture until smooth. Taste and season with salt and pepper and lemon juice. Garnish with a small dollop of sour cream.
