1 LB (16oz) frozen chopped spinach
1/2 cup grated parmesan cheese
1/2 cup fresh parsley (coarsely chopped)
2 Tb pine nuts
1/2 cup olive oil
1/2 tsp salt
fresh basil optional as garnish
Directions:
Directions:
Mix everything except olive oil in food processor
Add oil in slowly until pureed

optional:
After pesto is added to pasta, ricotta may be added
