3 lbs. broiled catfish fillets, 1 cup each, chopped pepper, onion, celery, 6 cups tomato sauce, 1 gal. water, 2 Tbs parsley, 1/2 Tbs green onion tops, 1 Tbs. worchestershire, 2tsp salt, 2 1/2 tsp. red pepper flakes, 2 1/2 tsp. black pepper, 2 tsp. garlic
3 tsp. paprika.

Make a roux and cook it to the color of peanut butter. Add the other ingredients (except the fish) and simmer for 25 minutes. Add fish and simmer for 25 minutes more.
