2 1/2 lb. chicken pieces (not boneless), 3/4 cup rice, 2-3 Tbs. grated onion, 1 3/4 cup chicken stock, 3oz. can sliced mushrooms including juice, 1/2 stick butter, salt and pepper to taste

Flour and brown the chix in a skillet with some oil. Put rice in a buttered cassarole dish and put the chicken in on top of the rice, add remaining ingredients, dotting the top with the butter. Cover with foil and bake for one hour at 350º.
