5 lbs. chicken breast, celery and onion, 2 red peppers, 2 green peppers, 1 1/2 cup olive oil, 1cup sherry wine vinegar, 1 1/2 tsp. salt, 3 crushed garlic cloves, 1 1/2 cups veg. oil, 2 tsp. oregano, 1/2 tsp. pepper.

Poach chicken in water with celery and onion and a little salt. Roast and peel the bell peppers, seed them and cut them into wide strips. Mix remaining ingredients and marinate chicken breasts with the pepper strips for at least 8 hours. Serve at room temperature with pepper strips arranged in "X's" on the chicken breasts.
