2 cups bulgar,wheat, 3 cups hot chix stock, 1 bunch green onion, 4 tomatoes, seeded and peeled, 1 cucumber, 3 bunches parsley, 3 lemons, juiced, 1 green pepper, 3/4 to 1 cup olive oil, 3 tsp. salt, 1/2 tsp. pepper. 1to 2 Tbs. fresh mint.

Pour hot stock on bulgar in a bowl and let stand, covered for 30 minutes, then chill. Chop fine the rest of the ingredients and toss with the dressing ingredients. Serve the next day.
