2 tbsp oil
3 tbsp red curry paste
8 tbsp coconut milk

Chicken (flat of thighs: 12-14 pieces)
4 potatoes (cut in 2-3 pieces)
2 onions (cut in 4 pieces)
2 1/2 cup coconut milk
4 tbsp fish sauce
2 tsp sugar
1/2 tsp curry powder
1/2 tsp paprika

Directions:
Directions:
Stir fry the first three ingredients (oil, curry past and coconut milk) over medium heat in a large pot.

Add all remaining ingredients. Bring to boil. Reduce to medium heat for 45 minutes. Skim fat from top. Thicken with cornstarch.

Note: I put the potatoes and onions in mid-way through the process. I also separate the potatoes and onions for serving. Serve with or over jasmine rice.
