1 1/2 c. boiling water
1 c. quick oatmeal
1/2 c. shortening
1 c. brown sugar
1 c. white sugar
2 eggs (beaten)
1 1/3 c. flour
1 t. cinnamon
1 t. vanilla

Icing:
1 c. brown sugar
1 c. white sugar
1 c. coconut
1/2 stick of butter
1/2 c. cream
Directions:
Directions:
Pour 1 1/2 c. boiling water over 1 c. oatmeal, let
set for 20 min.
Cream 1/2 c shortening with 1 c. brown sugar and
1 c. white sugar; add eggs, flour, cinnamon and vanilla.
Then add oatmeal mixture, blend well and bake
Put icing on while cake is hot and put back into
oven to brown.
