3 whole boneless chicken breast, halved
1 onion, sliced into rings
1/2 pound fresh mushrooms, sliced
1 clove garlic, pressed or finely minced
1 teaspoon tarragon
1 tablespoon fresh minced parsley
1 tablespoon prepared Dijon mustard
3/4 cup (1 1/2 sticks) butter
Flour seasoned with salt and pepper
1 lemon, thinly sliced

Directions:

Melt butter in heavy skillet and lightly saute garlic and onion rings. Remove onion and set aside.

Pound chicken breasts until well flattened. Dredge in flour seasoned with salt and paper, shaking off all excess. Saute chicken in butter and garlic mixture until lightly browned on both sides. Remove and set aside.

Add mushrooms to same skillet and saute until tender. Stir in mustard, tarragon and parsley. Add sauteed breasts back to skillet, piling mushrooms on top. Place onion rings and lemon slices over all. Cover and simmer 15 minutes.
