Ingredients:
Ingredients:
1 package (8 oz) feta cheese, well drained and crumbled
1/3 C minced fresh parsley
1/3 C olive paste or 1/2 C Kalamata olives, pitted and pureed with 1 tbsp olive oil
2 large egg whites
1 package (17 1/4 oz) frozen puff-pastry sheets, thawed

Directions:
Directions:
Preheat oven to 400º F. In small bowl, with fork, mix feta cheese, minced parsley, olive paste and egg whites until thoroughly blended. On lightly floured surface, unfold 1 pastry sheet (keep other sheet refrigerated), With floured rolling pin, roll pastry sheet into 16" by 14" rectangle. Cut pastry crosswise in half. Spread half of olive mixture evenly over 1 pastry half; top with remaining pastry half. With rolling pin, gently roll over pastry layers to seal them together. Grease large cookie sheet. With large chef's knife, cut pastry rectangle crosswise into 1/2-inch-wide strips, taking care not to tear pastry. Place pastry strips, about 1 inch apart, on cookie sheet, twisting each strip 3 or 4 times. Bake strips 12 to 15 min, until pastry is puffed and lighly browned. With pancake truner, transfer sticks to wire rack to cool. Repeat with remaining pastry sheet and olive mixture. Serve at room temperature. Store in tightly covered container.

These are particulary pretty when served in tall glass containers. We had these at Corinne's bridal shower and everyone loved them.
