1 14 34 oz. can salmon
3/4 cup milk
1 cup bread crumbs
1 egg, beaten
1 T fresh parsley
1 t. minced onion
1/2 t. worchestershire sauce
1/4 t. pepper

Lemon Sauce
2 T. butter 4 t. all purpose flour
3/4 cup milk
2 T.lemon juice
'1/4 t. salt
1/8 to 1/4 t. cayenne pepper

Directions:

Drain salmon and remove bones if desired.
Mix the first 9 ingredients well.
Spoon about 1/4 cup of mixture into a greased muffin tin. Bake at 350º about 45 minutes until brown.
Meanwhile melt butter in a pan, stir in the flour to make a paste. Gradually add the milk and bring to a boil stirring constantly. Cook 2 minutes longer until thick. Stir in lemon juice salt and pepper and serve over the salmon patties.
