Vanilla Cookie Crust
11 Vanilla sandwich cream cookies, crushed
3 tbsp butter or margarine, melted
24 oz. cream cheese
3/4 c. dark brown sugar
5 tsp. cornstarch
3/4 tsp. ground cinnamon
3 eggs
1 egg yolk
2/3 c. pureed banana (2 small)
3 tbsp. banana schnapps
3 tbsp. light rum
2 tsp. vanilla extract

Stir together crushed cookies and melted butter till well combined. Press evenly into greased springform pan. Combine cream cheese, brown sugar, cornstarch, and cinnamon. Beat till smooth with mixer. Add eggs and yolk, one at a time, beating well after each. Beat in pureed banana, schnapps, rum, and vanilla extract. Pour over crust. Bake at 350 for 15 min. Lower temp to 225 and bake 1 hour and 10min till center is no longer shiny. Remove from oven and run knife around edge of pan. Turn the oven off and return cake for additional 30min. chill uncovered, overnight.
