2 tsp. Olive Oil
4 oz. thinly sliced pancetta or bacon, chopped
2 1/2 c. whipping cream
1 c. freshly grated Parmesan cheese
8 large egg yolks
1/4 c. chopped fresh basil
1/4 c. chopped fresh flat leaf parsley
2 tsp. minced garlic
4 c. coarsely shredded chicken
salt
1 lb. Spaghetti
pepper
1 tbsp finely grated lemon zest

Directions:
Directions:
Heat the oil in a pan over medium heat. Add pancetta and saute until brown and crisp, about 8 min. Cool until lukewarm. Whisk in cream, cheese, yolks, basil,parsley, and garlic. Stir in chicken. Cook pasta as directed and drain. Add spaghetti to cream mixture and toss over medium low heat until chicken is heated through, about 4 min. (do not boil). Season to taste and sprinkle with lemon zest.

The great thing about this recipe is how fast it can be prepared. Not only can you use left over bacon/pancetta, slightly heated to "re-crisp". But, you can also use a store bought pre-roasted chicken. This significantly brings down your cooking time. Good for those busy days when you still want a filling meal.
