4 (6 oz) firm white fish fillets (flounder, mahi mahi, halibut)
1/2 tsp. kosher salt
1 tsp. pepper
1 c. raw spinach( washed and dried)
4 tsp. extra virgin olive oil
12 thin lemon slices
4 pieces (10"x15")Parchment paper

Directions:
Directions:
Preheat oven to 425º.

Sprinkle each side of the fillet with salt and pepper.
Place 1/4 c spinach on center of each piece of parchment paper. Lay the fillet on top of the spinach. Top each fillet with 3 lemon slices and drizzle with 1 teaspoon of olive oil. Fold the parchment paper into a packet (making sure there are no tears or leaks) and place on a baking sheet.
Bake for 12 minutes, remove from heat and place on plates. Tear open packet and serve immediately.

This is a very easy, low calorie, low fat way to prepare fish. There is no limit to what you can add to the fish. It can also be done on the grill using tin foil instead of parchment paper.
