3lbs onion, peeled
1/2 cup butter
1 1/2 tsp black pepper
2 tbsp paprika
1 bay leaf
3/4 cup flour
3 qts canned beef broth (low sodium)
1 cup white wine
2 tsp salt
French Bread
1/2lb mozzarella (slices)

Directions:
Directions:
Slice onion thin. Melt butter in large soup pot. Place onion in butter and saute slowly for 1 1/2 hours. Add pepper, salt, paprika, bay leaf and flour. Stir to mix. Saute over low heat for 10 minutes. Add broth and wine, simmer on low heat for 2 hours. Fill oven proof bowls with soup, top with 2 inch slice of French bread and cheese. Place under broiler until cheese is bubbly and brown.
