1 block (8oz) cream cheese
16 oz ( 1 pt.) sour cream
grated cheese of any kind to taste...the more the better. (great way to use up chunks.)
1/4 lb Buddig (or other shave-sliced deli style) meat such as ham or beef or pastrami, etc.
1 small can diced green chilis
garlic (mashed, in the jar kind is best here) to taste
salt and pepper to taste (depends on the deli meat used.

Soften the cream cheese and blend in mixing bowl on low with sour cream. Add the cheese(s), mix on low. Chop the meat into very small pieces...about 1/4 inch square, and add to the mixture, along with the garlic. Chop the chilis even smaller than they are in the can, and add slowly, tasting the mixture. Add them all if you like the tang. They should NOT be the hot jalapeno kind, but the diced green kind, which are not really hot. Add the salt and pepper to taste. I use Lawrey's seasoned pepper.

This is also good heated till the cheese just melts and blends. I like to put it in a small crock pot. Use chunks of sweet french bread or other crusty bread to dip in it. Dark breads are especially good with it. Buddig beef, with cheddar and muenster , or mozarella, heated is a great combo, especially if you put it in a bread bowl and put chunks of bread around it. It's kind of like a fondue thing. Some people use ham and Velveeta, but hold the salt on this combo, if you do.
