1 can white or yellow corn kernels
2 cans black beans
1 can dark kidney beans
1 can stewed tomatoes
1/2 small can tomatoes paste
1/2 small white onion, chopped
Oil
1 green chili pepper, finely chopped
1 can vegetable broth
1/3 bunch parsley, finely chopped
salt and pepper, to flavor
1/2 T. minced garlic
2 T. EVOO

Directions:
Directions:
Saute chopped onions in oil.

Bring to boil broth, tomatoes, corn, beans, EVOO and onions.

Once boiling, add paste, salt, pepper, garlic, chili peppers, and parsley.

Let boil on medium for 1 hour.

Reduce to summer and let cook for 1-3 more hours. The longer it cooks the better it tastes.
