2 1/2 c all-purpose flour
1 1/2 tsp baking soda
1/2 tsp salt
3/4 c (1 1/2 sticks) salted butter, softened
1 1/2 c packed light brown sugar
2 large eggs
3 c ripe bananas (about 7 medium), mashed
1 tsp vanilla extract
1 c (4 ounces) chopped walnuts

Preheat oven to 325º. Grease two 9 by 5 inch loaf pans; set aside. In medium bowl, combine flour, soda, and salt. Set aside. In large bowl, cream butter and sugar with electric mixer. Add eggs, bananas and vanilla; beat at medium speed until thick. Scrape down sides of bowl. Add flour mixture and walnuts, then blend on low just until combined. Do not over mix. Pour batter into prepared pans. Bake on center rack in oven for 55 to 60 minutes. A toothpick inserted in the middle should come out clean and the bread should pull away from the sides of the pan. Remove from oven and cool in pans for 10 minutes. Turn pans on sides and cool to room temperature before removing.
