1 lg. cauliflower, break into florets
4 oz. mushrooms, sliced
1/2 c. red and green peppers, diced
1/2 c. butter
1/3 c. flour
2 c. milk
1 tsp. salt
1 c. Swiss cheese, shredded
2 T. pimento, chopped

Directions:
Directions:
Preheat oven to 325º.

Steam cauliflower pieces over boiling salted water until crisp tender; about 10 minutes. Drain and set aside. In a saucepan, saute mushrooms and peppers in butter until tender. Blend in flour. Gradually add milk, stirring constantly until thick. Stir in salt, cheese and pimento. Place half the cauliflower in buttered casserole dish; cover with half the sauce, then repeat. Bake 15-20 minutes.
