Shrimp with Shells Recipe

1 lb. Shell pasta
3 T. olive oil
1 1/2 cups large shrimp diced (about 1/2 lb.)
1/2 cup Plum tomatoes,diced
1/2 cup yellow bell peppers, diced
1/2 cup white wine
1 T Dijon mustard
1 T lemon juice
1 tsp crushed basil leaves
1/4 cup Parmesan cheese, optional
1 T. fresh chopped parsley
salt and pepper to taste.

Cook pasta according to package directions. Add olive oil to large preheated skillet. Saute shrimp until opaque,adding tomatoes and peppers. Cook until tender. Add white wine, Dijon mustard. lemon juice and basil leaves. Bring to a simmer and keep warm. Combine pasta with shrimp mixture and toss. Add salt and pepper to taste. Top with cheese and parsley and serve.
