One large beef knuckle
8 c water
2 or 3 onions coarsley chopped
3 carrots cut in penny slices
3 stalks celery
3 potatoes cut in chunks
2 or 3 cans green beans strained
1 large can whole tomatoes
1 15 oz can tomato sauce
1 T salt
pepper to taste
oregano to taste
basil to taste
parsley to taste
Other vegetables may be added as preferred.
Rice can be used instead of potatoes. It is best if cooked rice is added.

Bring knuckle to boil, turn down heat and simmer for several (3 - 4) hours. Remove soup bone and strain liquid. Add the liquid, salt and all the other ingredients to a large pot. Season further after simmering for 1 hour or so. Serve with italian bread. Fabulous on a cold winters day!
