1 1/2 lb firm tofu, cut into 1 inch-thick slices;1/2 c French salad dressing; 4 Tbsp peach jam;
1/4 c finely chopped onion; 1/2 c golden raisins

Directions:
Directions:
Place tofu between two cookie sheets for 1 hour to squeeze out the water and flatten the tofu. Put something heavy on top and slightly tilt the cookie sheets so the water will drain off. Preheat oven to 350 degrees.Lightly grease a 6 x 10 in shallow baking dish. Cut pressed tofu into 1 in cubes and place in prepared dish. Combine remaining ingredients and mix well. Pour over tofu cubes. Bake uncovered for 45 min. Crisp under broiler 2-3 min

Serve with brown rice, sauteed bok choy and sugar snap peas sauteed with a little garlic and soy sauce.
Can also be made ahead,chilled and served cold.
