4 whole, boneless chicken breasts, halved
1 stick butter
2 medium onions
1/2 c flour
salt & pepper to taste
2 tsp Cumin
1 tsp Oregano
2 cloves garlic, minced
2 Tbsp chili powder
1 can Ro-tel tomatoes and chilies
3/4 lb Old English cheese, grated

Directions:
Directions:
Put flour, salt and pepper in a bag with the chicken. Shake until the chicken is dusted well. Brown chicken in butter for 3 minutes on each side. Remove chicken to a 3 quart Pyrex dish. Saute' onion in remaining butter for 5 minutes. Add tomatoes and chilies, garlic, cumin, oregano, chili powder and grated cheese. Simmer until cheese melts. Pour over chicken and bake at 350º for 25 minutes.
