4 oz. thawed and thoroughly drained frozen crab meat,
or 4 oz. fresh crab meat, flaked, or 4 oz. imitation crab


4 oz. Cheddar cheese, shredded
1/4 cup chopped green onions
4 eggs
1 cup evaporated skim milk
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/8 teaspoon pepper
Dash of paprika

Preheat oven to 400º. Spray 8" glass pie plate with cooking spray and set aside.

In medium bowl, combine crab meat, cheese, and green onions; using back of spoon, press crab meat mixture over bottom and up sides of sprayed pie plate.

Using a wire whisk, in medium mixing bowl, beat together eggs, milk, salt, mustard, and pepper; pour over crab meat mixture. Sprinkle with paprika and bake until set, about 30 minutes. Remove from oven and let stand for 5 minutes before serving.
