1 1/2 c. dry white wine
1 clove garlic
4 c. shredded Danish Cheese i.e. Havarti & Danish Fontina
2 T. cornstarch
Dash of white pepper & nutmeg
1 tsp. baking soda

Directions:
Directions:
Shred cheese. Then toss cheese with cornstarch.

Pour wine into a 2-quart saucepan. Add garlic. Heat gently until bubbles start to rise. Discard garlic.

Slowly add the cheese to saucepan, stirring gently until all cheese is melted. Add spices. Just before serving, stir in baking soda.

Serve with chunks of French bread, fresh mushrooms, celery chunks, partly cooked zucchini, broccoli or asparagus, apple wedges, bites of cooked chicken, ham or shrimp.
