1 cup +2 tablespoons flour
1/2 cup quick cooking oats
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter
1/4 cup sugar
1/2 cup brown sugar
1 egg
1 1/2 teaspoon vanilla
7 oz crystallized ginger chips
4 oz chocolate chips

Preheat oven to 350

Grease cookie sheets.

Mix together flour, oats, baking powder and salt. Set aside.

Beat butter and sugars until blended; add egg and vanilla. Stir flour mixture into butter mixture until smooth. Stir in crystallized ginger. Add chocolate chips.

Heap teaspoons of dough onto cookie sheets, space 2 inches apart. Bake 12-15 minutes.

Remove cookies and let sand until firm, about 2 minutes.
