1 can evaporated milk
2 1/2 c. flour
1 c. sugar
1 c. raisins, if desired
3/4 c. packed brown sugar
2/3 c. shortening
3/4 tsp. cinnamon
3/4 tsp. allspice
1/2 tsp. ground cloves
1/2 tsp. nutmeg
3 eggs
Caramel Frosting:
1 c. packed brown sugar
1/2 c. butter
1/3 c. evaporated milk
2 c. powdered sugar

Mix 1 1/3 c. of the evaporated milk with the rest of the ingredients. Beat on low for 30 seconds, scraping bowl constantly. Beat on high for 3 min. scraping bowl occasionally. Pour into greased 9x13 or 2- 8 or 9in. round pans. Bake at 350º for 35-45 minutes or until tooth pick comes out clean. Frosting: Heat brown sugar, butter and evaporated milk to boiling over medium heat. Boil and stir 2 min. Remove from heat; cool until slightly thickened, stirring occasionally, about 10 min. Gradually stir in powdered sugar. If necessary, stir in 2-3 tsp. water until frosting is smooth and of spreading consistency.
