Salmon Croquettes Recipe

3 T butter
3 Tbsp. flour
1/2 tsp salt
1/4 tsp pepper
1 c. milk
2 c. canned salmon
1 Tbsp. finely cut parsley
1 Tbsp. finely chopped onion
2 hard-cooked eggs, diced
2 eggs
2 Tbsp cream
1 tsp lemon juice
1 c fine bread crumbs
fat for frying.

Melt butter, over low heat. Stir in flour, salt and pepper. Add milk gradually, stirring constantly. Cook sauce, stirring constantly, until smooth and thick. Add salmon, parsley, onion and hard-cooked eggs. Cook over low heat 4-5 minutes, stirring occasionally. Beat 1 egg lightly with cream. Stir into salmon mixture. Cook, stirring 1-2 minutes. Remove from heat. Add lemon juice. Let cool a few minutes, then pour into butter dish. Let cool completely. (Can be made the day before and refrigerated).
Shape into patties or croquettes. Roll each in crumbes. Beat remaining egg with 2 Tbsp. water. Dip crumbed croquettes into egg and again into crumbs. Fry until lightly browned. Drain and serve.
