1 c. flour,
1/4 tsp. salt,
1/8 tsp. garlic salt.
1/3 c. plus 1 Tbs. shortening,
3-4 Tbs. cold water,
1 8 oz. package cream cheese,
1/3 c. ricotta,
1/4 c. butter,
2 eggs,
2 Tbs. flour,
1/2 tsp. salt,
1/4 tsp. pepper,
2 Tbs. fresh, chopped basil

Directions:

Combine first three ingredients, cut in shortening. Sprinkle cold water, stir, shape into a ball and chill. Roll dough into 1/8 inch thick 11 inch circle. Place in bottom and 1 1/2 inches up sides of a 8 inch spring pan. Prick with fork, cover and chill 30 minutes. Place foil over pastry, cover with dried peas and bake at 450º for 8 minutes. Remove foil and peas and bake for 5 minutes more. Remove and cool. Combine cheese, ricotta and next three ingredients. Blend. Pour into pastry and bake at 350º 35-40 minutes. Serve hot or at room temperature. Garnish with cherry tomato wedges and fresh basil.
