1 pound Italian Sausage
1 c. onions, chopped
2 garlic gloves, sliced
5 c. beef broth
1/2 dry red wine
2 c. (about 4 medium) peeled tomatoes, chopped
1 c. thinly sliced carrots
1/2 tsp. each basil and oregano
8 ounces tomato sauce
Add last 1 hour of cooking
2 small zucchini, sliced up
1 8 ounce package Tortellini's with cheese filled
3 tblsp. parsley
1 medium green pepper, cut into 1/2 pieces
Parmesan Cheese for garnish

I use the bottom of a big soup pan to brown the sausages.
Set them aside, and saute the onions in the grease.
Then add the sausages back into the pot with the ingredients on the list down to the tomato sauce.
Last 1 hour of cooking the soup you can add the
Zucchini, tortellini, parsley, and green pepper.
