Tournedos Rossini Recipe

1/4 c butter
1&1/2 T flour
1 c beef stock
1/3 t peppercorns crushed
1 bay leaf
1 allspice
1 clove
2 T Brandy
2 T Burgundy
1 T vegetable oil
4 filet mignon
1/2 lb pate
truffles sliced

In a small sauce pan, melt butter and stir in flour. Brown and stir in beef stock until smooth. Add next seven ingredients and simmer about 5 minutes. Remove bay leaf, allspice and clove. Grill filets to taste. To serve arrange a filet on a serving plate, arrange a large slice of pate on top and garnish with sliced truffles. Pour hot sauce over all.
