This is my way of making these delicious pancakes taught to me by my father many yrs ago.

5-6 white potatoes, washed and cubed to fit into a processor chute.

Use regular blade included with processor, no attachment is needed.

Grind up potatoes and add a large onion also.

In a large fry pan put in oil to cover the bottom and let get hot.
Spoon in one spoonful of batter. (Be careful cause it could spit grease out due to the water in the potatoes.)
Cook until the sides of pancake turn dark brown.
Flip to other side and wait a couple minutes and then lift out onto a platter.
Be careful not to lay another layer on top of first layer.....they have a tendency to stick and hard to lift off when serving.

Condiments are ketcup and butter.
May serve with apple sauce also.

Note:
Cook always eats first pancake to insure good luck in making the rest of the batch.
